Beer Battered Snapper
Just finished eating a fanstastic meal of Beer Battered Snapper and Salad and thought I better do you all a favour and post it on here.

Man this is one simple recipe suitable for any gender to make.
Batter:
Sift into a mixing bowl -
3/4 Cup of Standard Flour (Not Self-Raising)
1 Teaspoon of Salt
2 Tablespoons of Cornflour
Then using the beer of your choice (Lion Red and Darker beers work better than lighter beers, choice is yours) fresh out of the fridge, gradually por the beer into the bowl mixing ingredients together, keep the pace up with the mixing to ensure the batter is smooth and not lumpy. Once the consitancy is thick but can run off the spoon it is ready to leave to the side and for you to drink the rest of the cold beer that is waiting for you after that excercise of mixing.
This mixture will feed about 4 - 6 people so vary the mixture depending on your own requirements.
Dip the fish straight into the batter and coat generously and put straight into the hot deep fryer or hot pan for shallow frying. I shallow fry mine with about 1.5cm of oil only becuase I do not have a deep fryer.
Once golden drain off and salt.
Serve with whatever you want, but my preference is a fresh salad with mesculin, capsicum, spring onions, sundried tomatoes, red onion and grated cheese as this compliments the fish beautifully.
