Batter for deep fried fish
This is a recipe I have had the pleasure of experiencing how easy it is to prepare and enjoying the lovely taste of the end result.
Ingredients
1 Cup Flour
1 Teaspoon Salt
a little white pepper
1/2 Teaspoon of Baking Soda
1 Teaspoon of Vinegar
2 Table spoon of oil
about 1 Cup of Cold Water
Instructions
Sift dry ingredients into a bowl. Mix Vinegar, oil, water and whisk into the dry ingredients, gradually drawing flour in from the side of the bowl, to make a smooth batter. If it looks too stiff, whisk in a little more cold water.
Flour the fish and dust it off lighly before dipping the fish in batter. Deep fry the fish in hot fat such as lard, or in oil.

i just use flour and beer these days, but that does sound good

You can't go past granny fayes batter - just add water or beer and let sit 30 minutes. Can be found in the fish section in most supermarkets. Tried many recipes over the years and this is the best.

Andrew, I use your recipe but add 1/2 bottle of beer and a little more flour. Works a treat! A light and tasty batter. My 6 year old wont eat fish any other way now!

keep ya batter as cold as you can, Instead of a cup of cold water i use ice cubes and let em melt slow in the fridge as it rests, doesnt matter if they are still floating around when you use it, the coldr the lighter and fluffier, crispier!!! you kiwis could probably just leave the bowl out side eh!!
